蔥爆羊肉

制作原料：羊肉、雞蛋1個(gè)、大蔥、精鹽、醬油。

制作方法：將羊肉切成片，放入碗內(nèi)加精鹽、雞蛋。將大蔥一剖為二，改刀成段，取一碗放入精鹽、醬油。炒鍋內(nèi)放入食用油，在旺火上燒至約150℃時(shí)，放入羊肉，再放入蔥段攪散迅速撈出。鍋內(nèi)留少量油，用旺火燒熱后放入羊肉丁、蔥段爆炒。最后倒入碗內(nèi)。
